This is where the glycemic index, defined as the physiological basis of classification of carbohydrate foods. Good carbs are those that provide energy without requiring a lot metabolism. 
Let's take a brief look at the processes that take place after I ingested food containing hydrocarbons. Carbohydrates - and all essential nutrients - are broken down by the body in order to reach a form that can be used. Carbohydrates are converted into glucose, the most important energy source for the body and the main food for the brain. Glucose is absorbed into the blood and embarks on a short trip, choosing destinations which can help the body. Depending on the type of carbohydrate, glucose can move quickly and suddenly blood or absorption may be slow and gradual. Obviously the second option is preferable.
